Gluten free, GDM friendly (2 carbohydrate exchanges) Serves 1.
This is a basic nourishing quiona salad recipe that you can adapt to the ingredients you have around the house. It is a great lunch time meal!
Ingredients
2/3 cup cooked quinoa (either leftovers from night before or made fresh)
1 cup leafs of choice (Baby spinach, rocket etc)
1/2 cup chopped tomato/cherry tomatoes
1/4 cup chopped cucumber
1/4 cup chopped carrot
1-2 tsp tomato paste
1/4 cup pine nuts (or swap to nuts of choice)
1/4 cup sunflower seeds (or swap to seeds of choice)
1/3 cup cheddar cheese
1/2 cup left over chicken/lamb or can of tuna
Method
1. Place quinoa in a serving bowl
2. Add tomato paste to quinoa and stir through well
3. Mix in chopped salad
4. Add nuts and seeds, then stir well
5. Mix in chicken/meat/tuna of choice
6. Top with cheese
7. Enjoy
