This is a great meal option for breaky, lunch or dinner!
There are no exact rules and you have to do your own carbohydrate counting, to a degree.
Simple use a big fry pan and fry up any chopped veggies you have in your fridge, using olive, avocado or macadamia oil. Add at least 2 eggs per person, plus cheese if you like (& can tolerate dairy). Serve with either dense grainy toast for your carbohydrate or left over sweet potato chips or add corn to the fry pan.
A great easy option!
